Goli Bajje - A Manglorean Snack


Ingredients
  1. All purpose flour /Maida - 1 cup
  2. Chickpea Flour/ Besan - 1/4 cup
  3. Curd - 1/2 cup
  4. Cumin seeds - 1 Tsp
  5. Ginger finely chopped - 1 Tbsp
  6. Green Chilly - 1 Tbsp
  7. Sugar - 1 Tsp
  8. Baking Soda - 1/4 Tsp
  9. Curry Leaves - 2 Sprigs (chopped)
  10. Salt - as required
  11. Oil - for deep frying

Preparation
  • Mix all the above  ingredients , and make a batter . The batter consistency should be as thick as a cake batter.
  • Leave the batter to rest for about 20-30 minutes.
  • Heat oil in a deep bottomed frying pan. Drop a Tbsp of batter into the hot oil. You can drop 3-4 at a time. fry them for 2 to 3 minutes until golden brown.
  • Make the flame to medium and fry the remaining.Drain it on a paper towel.
  • Serve this crispy and soft interior bajje's , with mint chutney/coconut chutney
Note
  • Do not make the batter too loose. Else it will absorb too much oil.
  • You can add small pieces of coconut into the batter.  
  • The Bajje will increase in size when frying.
