Beetroot Upperi - Beetroot Stir Fry



Ingredients

  1. Beetroot - 1 small
  2. Onion - 1/2
  3. Grated coconut - 2 Tbsp
  4. Red chill powder - 1 Tbsp
  5. Pepper powder - 1Tsp
  6. Curry Leaves - 1 sprig
  7. Garlic crushed - 2-3 cloves
  8. Mustard seeds - 1 Tsp
  9. Coconut Oil - 1 Tbsp
  10. Salt

Preparation
  • In a vegetable chopper , chop the beetroot fine. (you can see in the pic how fine it should be..)
  • In  a bowl , mix chopped onion, coconut, red chilly powder, pepper powder, curry Leaves and salt.
  • Heat oil in a pan, crackle mustard seeds. Now add the mix to it. Mix well. Cook until the beets are done ans soft.
  • Serve with rice.
