Rava Dosa


Rava Dosa is crepe made from semolina and flavored with coconut,onion and curry leaves. It is a favorite dish at my home served  hot hot. If i forget to soak rice for dosa,but still need to satisfy the craving for it, then Rava Dosa is the answer as it does not require fermentation or any advance preparation.hurray!!!
Ingredients
  1. Rava / Sooji / Semolina - 2 cups
  2. Onion chopped - 1
  3. Grated coconut - 1/2 cup
  4. Curry Leaves roughly chopped - 2 sprigs
  5. Salt - as needed
  6. Water - as needed
  7. Oil/ ghee - as needed

Preparation
  • In a bowl, mix rava, grated coconut, curry leaves , onion chopped and salt. Make a batter with enough water to a consistency dosa batter. Keep the batter aside for about 20 minutes. 
  • Heat a tawa or a non-stick pan, stir the batter with a spoon, pour a ladle of the batter and spread in a circular motion.
  • Cook for 2 minutes. Sprinkle few drops of oil on top and flip dosa.
  • Dosa read to be served with any chutneys.

Gothambu Rava /Cracked Wheat Upma

              Upma is a simple breakfast , which is healthy and also very comforting food. In South India , we have different varieties. Mainly we make with Sooji rava, Aval(Beaten rice flakes),Semiya, etc.... 

Ingredients
  1. Gothamba Rava (Cracked Wheat) - 1 cup
  2. Water - 2 1/2 cup
  3. Carrot Grated -1
  4. Onion chopped - 1
  5. Green Chilly - 4
  6. Ginger Chopped-  1 Tsp 
  7. Turmeric powder - 1/4 Tsp
  8. Mutton Masala - 1/4 Tsp(Optional)
  9. Grated Coconut - 1/4 cup
  10. Curry Leaves - 1 Sprig
  11. Oil - 1 Tbsp
  12. Ghee - 1 Tbsp
  13. Mustard Seeds - 1/4 Tsp
  14. Urad Dal Split - 1/4 Tsp
  15. Salt - as required

Preparation
  • Heat a pan and dry roast rava for about 3-4 minutes , until a slight good aroma comes. Keep it aside.
  • Heat oil and ghee  in a kadai, splutter mustard seeds and urad daal.
  • Then add curry leaves, onion, carrot, green chilly and ginger. Saute till the raw smells goes and onions turn pink.
  • Add turmeric powder. Saute.Add water and salt. Let it boil.
  • Add mutton masala. Mix well. Now lower the flame and slowly add roasted rava to water  Keep stirring so that lumps are not formed. Mix well.
  • Check salt.Cover with a lid. Cook for maximum 10 minutes or until water is fully absorbed.
  • Garnish with grated coconut.
Note 
  • You can add channa daal and peanuts , after adding urad daal. This will give a good taste. (I didn't as , it was over in my kitchen.)
  • You can also add more veggies like beans & peas

Thariyunda (Sweet Semolina Balls)

Ingredients
  1. Roasted Rava (Semolina) - 1 cup
  2. Ghee - 2 Tbsp
  3. Cashew nuts & Raisins - 10 each
  4. Grated coconut- 1 1/2 cup
  5. Sugar- 1 1/2 cup
  6. Milk - 1/2 cup
  7. Cardamom crushed - 4-5

Preparation
  • Heat ghee in a non stick pan, add cashew nuts and raisins. Fry till cashews become brown and raisins pop up.
  • Then add rava to it. Stir it well and keep aside to cool.
  • Mix grated coconut,sugar , milk and cook till the sugar melts. On slow fire. Keep stirring.
  • When sugar is melted and is starts to get thickening, remove it from fire and add rava mix and  crushed cardamom to it. Mix well.
  • When it is warm enough to handle , shape it into small balls and keep it in a tight container.
Note
  • Spread some ghee in your hands when you make small balls.
