Paneer Kathi Wraps - My Guest Post For Rafee


Doing a guest post for blogger who happens to be a very very special virtual friend  is rather more happy , celebrating than interesting.So this is also a proud moment for me of being a A Guest at Rafeeda of The Big Sweet Tooth. My friendship with her all happened through her happy and inspiring comments on my blog..I know you all might have got the same experience.She is a very warm and wonderful person.I really wonders at this young age how she manages all the work as wife, mother, as home maker and of course blogger. She takes her time to leave her valuable comments in each blogger's space she visits. I was amazed by the way she writes and understand each quotes from Quran, or any other, and she connects each with our emotions and daily life... when i read those, it leaves a thought in my mind..It is a pleasure to know you Rafee and i am glad to do this guest post and thank you so much for giving me this opportunity.

And today as her guest i have prepared Paneer Wraps, which is a hit at home now.....a lovely recipe.....a very mild but a very filling snack you can call it.

Bread Potato Fritters


Do you have left over bread in our fridge...Here is an easy tea time snack for you.. Just mix it up with boiled and mashed potato and masala's and deep fry to golden brown...

Recipe adapted from :Drools...

Ingredients
  1. Bread slices - 8 - 10
  2. Potato - 4
  3. Green chilli - 2
  4. Onion - 1 big finely chopped
  5. Red chilly powder - 1/2 - 1 Tsp
  6. Coriander leaves chopped - 1/2 cup
  7. Sal - to taste
  8. Oil - for deep frying

Preparation
  • Wash and boil the potatoes, peel and mash it. Keep aside in a bowl.
  • Dip the bread slices in water and squeeze out the water in it. Crumble it with your hand and add it
  • to the mashed potato.
  • Add the other ingredients to the bread potato mix and combine it well to a smooth dough.
  • Take lemon sized ball from the mix and shape them into round or oval shapes. (You can smear some oil in your palm to prevent from sticking). Keep this aside for 30 minutes. (When you put the warm balls into oil it might break open and absorb oil.)
  • Heat oil for deep frying.
  • Deep fry the balls in hot oil, until golden brown. Drain on a tissue paper.
  • Serve hot with ketchup or any dips you wish.

Choco Bread Pudding


 Ingredients
  1. Bread Slices (I used Milk Bread)- 6 
  2. Eggs - 3
  3. Milk - 2 cups
  4. Sugar powdered - 3/4 cup
  5. Cinnamon powder - 1 Tsp
  6. Vanilla Essence - 2 Tbsp
  7. Cashew Nuts chopped , Raisins  - 1/2 cup
  8. Chocolate Spread - as needed
  9. Sugar - 1 Tbsp
  10. Butter - 45 gms
Preparation
  • Preheat the oven to 180 degrees. Grease your baking dish with butter and keep aside.
  • Spread butter on side of bread slice and spread chocolate spread on one side of another piece of bread. Make a sandwich of both.Repeat the same for all the slices.
  •  Cut into 2" cubes.
  • Layer it in the baking dish with buttered side up.
  • In a bowl beat the eggs one by one. Then add milk, powdered sugar,vanilla essence and cinnamon powder. Mix well.
  • Spread some dry fruit mix. Then pour the custard mix slowly onto the bread slices.
  • Let it soak for about 15 - 30 minutes.
  • Sprinkle some sugar and the remaining dry fruits mix on top of it.
  • Bake in the preheated oven at 180 degrees for about 40 - 45 minutes. Serve warm or refrigerate and serve cold.

Note
  • You can use sweet bread, milk bread, butter bread etc
  • If you want you can cut the edges of the bread slices. I left it like that itself..
  • The pudding is moderately sweet, but if you like it super sweet, use more sugar.
  • You can also use jam on another layer of bread, or any sweet spread which you like.
  • You can also add walnuts.
  • You can also use left-over breads.

Idli Upma



Ingredients:
  1. Idlis - 10 nos
  2. Onion -1
  3. Green chilly – 2
  4. Ginger chopped – ½ Tsp
  5. Salt – as per taste
  6. Mustard Seeds – ½ Tsp
  7. Urad Daal – 1/ tsp
  8. Dry red chilli – 2-3
  9. Turmeric powder – ½ Tsp (Optional)
  10. Red Chilly powder - 1/4 Tsp
  11. Mutton Masala - 1/4 Tsp (Optional)
  12. Grated coconut - 2 Tbsp
  13. Asafoetida (Kaayam) - a pinch
  14. Curry Leaves – 2 Twigs
  15. Oil – 2 Tbsp

Preparation:
  • Cut the left over Idlis, into cubes and keep aside.
  • Heat oil in a kadai, crackle mustard seeds, through in urad dal , dry red chilly, and curry leaves. Stir in for 1 min.
  • Add ginger, green chilly, chopped onion, salt and grated coconut. Sauté for 5 mins till onion colour changes. Add turmeric powder, red chilly powder and mutton masala. Mix it well. Off the flame.
  • Now add idlis which are cut into cubes. Check the salt and add if needed . Mix all the masalas well. Close the lid for 5 mins.
  • Serve hot with evening tea or coffee…….

Chicken Ottupathiri

Ingredients
  1. Pathiri podi (Rice powder) - 1 cup
  2. Salt
  3. Boiling water -2 cups
Masala Preparation
  1. Chicken (boneless) cooked with salt and shredded - 1 cup
  2. Onion chopped - 1/2 cup
  3. Green chilly - 3-4
  4. Turmeric powder - 1/4 Tsp
  5. Red Chilly powder - 1 1/2 Tsp
  6. Pepper powder - 1/2 Tsp
  7. Fennel Seeds - 1/4 Tsp
  8. Mustard seeds - 1/2 Tsp
  9. Curry Leaves - 2 sprigs
  10. Coriander leaves finely chopped - 3 sprigs
  11. Oil


Preparation
  • Mix Pathiri podi/rice powder, salt , by adding boiling water little by little. Knead it to a soft dough.
  • Heat oil in a pan , splutter mustard seeds,add onion and green chilly. Saute till onion turns pink.Add in all the masala powder. Let the masala leave its aroma.Add in the shredded chicken.Mix well.
  • Add Fennel seeds. Cook closed for 5 minutes. 
  • Add curry leaves and chopped coriander leaves. Leave it to cool.
  • Now add the prepared masala to the dough.Drizzle little oil on your palm, Mix well to nice dough.
  • Now take small balls out of the dough.
  • Place it on a greased butter paper, flatten it to a thin round shape with your palm.(If you are not getting a round shape, shape it using a round cutter).
  • Heat a tawa, drizzle oil, cook for a couple of minutes on both sides until you see brown spots all over. 
  • Serve hot with dates chutney.

Puttu Upma


Ingredients
  1. Puttu - 1 cup
  2. Grated coconut - 1/2 cup
  3. Onion - 1
  4. Green chilly - 4-5
  5. Turmeric powder - 1/4 Tsp
  6. Curry Leaves - 2 Sprigs
  7. Oil - 1 Tbsp
  8. Mustard seeds - 1/4 Tsp
  9. Dry Red Chilly - 2
  10. Fennel Seeds - 1/4 Tsp

Preparation
  • Heat oil in a pan, throw in mustard seeds.After it crackles add fennel seeds,dry red chilly and curry leaves.
  • Add green chilly and onion to it. Saute it well for 2-3 minutes.Also add  turmeric powder and enough salt.
  • In a bowl powder puttu with your hand, also add grated coconut to it.Mix well
  • Add this to the pan and mix well. 
  • Serve hot with tea or coffee.

Easy Bread Halwa!!!

Halwa, which is popularly known as"Aluva" in Kerala, is one of the sweet dessert that is liked by most of them. There are different types of halwa in Kerala, especially when we go to Kozhikode to my sisters place, their Aluva tastes entirely different....."Karutha Aluva" from kozhide is the best i ever had....
Here is a simple halwa recipe , which i made from left over bread.....


Ingredients
  1. Bread Crumbs – 250gms
  2. Ghee (Clarified Butter) – 4-5 Tbsp
  3. Butter – 3 Tbsp
  4. Milk – 3/4 cup
  5. Powdered Sugar – 200 gms
  6. Cardamom powder – ¾ Tsp
  7. Cashew nuts chopped – ½ cup
  8. Vanilla Essence – ½ Tsp
  9. Grated almonds – Garnishing

Preparation
  • In a non-stick pan melt butter and ghee. Add bread crumbs to it. Mix well.
  • Put the flame low. Add milk and sugar to it.
  • Mix well until bread crumbs absorb all the moisture.
  • When ghee starts to separate from the halwa, add cashew nuts, cardamom powder and vanilla essence to it. Mix it well.
  • When the halwa starts forming into a single lump of ball and starts leaving from the side of the pan, it is ready.
  • Grease a bowl or any mould with a little ghee on all the sides and transfer halwa into it .
  • Pat the halwa into an even shape. Let it cool and rest for about ½ hour. De-mold it and cut it into any shape you like.
  • Garnish with almonds.
Note:
  • I used butter bread here, because it is a bit sweet. You can also use white/brown/normal bread, then you need to increase the amount of sugar.

Idli Surprise



Ingredients:
  1. Idlis  - 6
  2. Fennel Seeds (Perumjeerakam) – ¼ Tsp
  3. Turmeric powder - ½ Tsp
  4. Red Chilly powder - 1 Tbsp
  5. Garam Masala -  ¼ Tsp
  6. Salt - as per taste
  7. Coriander Leaves - 1 Tbsp
  8. Oil – as required
 Preparation:
  • Mix all the ingredients with little water to make a paste. Marinate the idlis. Keep for 5 mins
  • Heat a pan pour little oil and shallow fry idlis on low flame till the masala change its colour to little brown.
  • Serve it hot.
Note: You can use the idlis which are prepared in the morning. It shouldn't be hot while marinating.
