- All purpose flour /Maida - 1 cup
- Chickpea Flour/ Besan - 1/4 cup
- Curd - 1/2 cup
- Cumin seeds - 1 Tsp
- Ginger finely chopped - 1 Tbsp
- Green Chilly - 1 Tbsp
- Sugar - 1 Tsp
- Baking Soda - 1/4 Tsp
- Curry Leaves - 2 Sprigs (chopped)
- Salt - as required
- Oil - for deep frying
Preparation
- Mix all the above ingredients , and make a batter . The batter consistency should be as thick as a cake batter.
- Leave the batter to rest for about 20-30 minutes.
- Heat oil in a deep bottomed frying pan. Drop a Tbsp of batter into the hot oil. You can drop 3-4 at a time. fry them for 2 to 3 minutes until golden brown.
- Make the flame to medium and fry the remaining.Drain it on a paper towel.
- Serve this crispy and soft interior bajje's , with mint chutney/coconut chutney
- Do not make the batter too loose. Else it will absorb too much oil.
- You can add small pieces of coconut into the batter.
- The Bajje will increase in size when frying.
